BISCOTTI - MUOLLO RECIPE
Biscotti: 4 cups flour ( not self raising ) 3 eggs 1.5 cup oil 2 pkts yeast salt fennel 1/2 teaspoon sugar roll out put in pot boiling water and lift out when floats bake in oven send to Nelson for authentication
RAVIOLI - Muollo recipe
To make 60x
Step 1: Pastry - mix to stiff mixture:
2 eggs
1 tablespoon water
1 tablespoon milk
salt
3 cups of flour ( not self raising )
Step 2: Filling - mix:
500 grams diced ham ( Mum uses ham steaks which are easy to cut rather than bacon which boolie used )
chopped parsley ( about 1/2 cup )
500 grams cottage cheese
500 grams mozzarella cheese
500 grams mild cheese
2 eggs
When made, put in boiling water ( about 4 at a time ) and remove when they float to top. Then ready to add to pulp
Step 3: Pulp - bring to boil and let simmer for about 1 hr
put 1/2 cup oil in pot;
add chopped meat to flavour
12 tins Leggo pulp or Watties
add 1/2 cup
Step 4: place in tray ( no more than 2 high )
Step 5: post to Nelson for official tasting
